We offer weekly programs afterschool to low-income elementary students primarily residing in the Hillyard neighborhood. Our Eat MORE RAINBOWS Junior Chef program instructs children in culinary skills and recipe development using fresh produce, legumes, and grains. These classes show the benefit and taste sensations of plant-based foods frequently passed over for fast, processed foods. Children learn how including a rainbow of colorful foods helps their bodies, which foods are best for optimum health, the benefit of daily use of the 8 FREE doctors (Rest, Activity, In-Control, Nutrition, Believe, Oxygen, Water, Sunshine), how to read nutrition labels, and environmental impacts of their food choices, – and they have fun learning health concepts reinforced through the senses of the eyes, the taste, the touch, and smell!

Currently in Spokane County, twenty-five percent of teens are overweight or obese. Approximately, one in eight people in the Spokane community is food insecure, including 1 in 5 children leaving individuals to rely on processed, cheap, high-fat food. Studies indicate the increase in obesity is due to consumption of heavily processed food. Many people do not know how to eat well or how to cook.
