The fish: Kaluga Sturgeon are native the Amur River in China. Along with its cousin Beluga (Huso huso)
this fish comprises the genus Huso. Unlike Beluga, Kaluga is a freshwater species, although it can grow
to similar size. The combination of large egg size and quick-growing freshwater attributes has made it a
popular farm species.
The caviar: The flavor profile of Dauricus is intense and earthy, with a marine finish and a firm and poppy
egg and creamy finish. In this way, Kaluga caviar fits between freshwater species like Sterlet and more
